Vall de Boí’s cuisine is a mountain cuisine based on the natural ingredients available locally and prepared according to ancient traditions. Above all, it is a seasonal cuisine. Mushrooms are very important in our dishes, as are organic beef and lamb from animals reared in our region.
It is based on the region’s most basic products: potatoes, vegetables, lamb, pork, beef, mushrooms, and river trout… It is a cuisine with a very ancient tradition, which makes the most of all the resources offered by these lands. A highly caloric and not too elaborate cuisine, appropriate to face the long winter months.
